Tsukiji Jisaku

A garden through the seasons, a table in its prime
where guards come down and trust begins

Prologue

Where people
come closer

Since 1931, this corner of Akashi-cho in Tsukiji has been the place
where people of consequence spend an evening that matters.
A sukiya-style house built as the Iwasaki family's villa, and a 2,600㎡ pond garden made to be viewed from the rooms.
Past the gate the city recedes, and in a private room no one can overhear,
titles come off and people speak as themselves.

Our mizutaki, and one nakai attending each room.
For ninety-five years Jisaku has quietly held
the most important table in the business.

What Jisaku
has put in place

Foundations
What Ninety-Five Years Have Built

History, quiet, and taste
six things ninety-five years have grown

  • 一Provenance

    On the Iwasaki villa's ground
    the real weight of Japan

A sukiya-style house built as the Mitsubishi Iwasaki family's villa, and a 2,600㎡ pond garden made to be viewed from the rooms. A presence handed down since the Meiji era, which gives an evening for important guests a standing that does not waver.

  • 二Privacy

    The city shut out
a room that seals the air

Past the gate the outside world recedes, and a private approach keeps your party from crossing paths with anyone else. Behind doubled sliding doors, only the sound of the garden's waterfall reaches you, and a delicate conversation stays where it belongs.

  • 三Mizutaki

    Mizutaki, taught to one heir
    a taste that never moves

Since our founding, a single mizutaki-ban has kept this dish. Chicken and water and nothing else — a golden broth arrived at by taking away. Holding a taste steady across a century says something about how we host.

  • 四Cuisine

    Dietary needs met
    without setting anyone apart

Allergies, vegetarian and vegan, religious requirements — each guest is accommodated individually. We build the menu so that everyone at the table can eat freely, without anyone having to think about it.

  • 五Service

    One nakai per room
    reading the air

Each private room has its own nakai. When the talk turns serious she disappears; when it eases, the next dish arrives at exactly the right moment. With the running of the evening handed over, the host can give it all to the conversation.

  • 六Culture

    Japan, understood
    without translation

A geisha at your table, shamisen or koto, the stillness of tea. With nakai who speak English and Chinese, guests from abroad meet the Japanese sense of beauty directly — and the evening becomes one they remember.

What organisers ask us

Concerns & FAQ

We are hosting someone senior and don't know what matters.

Experienced staff will support you from the first meeting right through to the day itself, so please rest easy.

How long does an evening take?

Usually two to two and a half hours. We pace the courses around the greetings and the conversation, so if you need to finish early, please tell us in advance.

We would rather not run into another party.

We plan routes floor by floor according to booking times. Two parties on the same day are kept apart by where the rooms are and when guests are shown in.

Can you arrange gifts and commemorative photographs as well?

Mizutaki to take home, a photographer, bouquets and floral arrangements — leave all of it with us. On the day you need only make the greetings.

We are hosting overseas VIPs and want an evening that keeps its standing.

Staff who speak English or Chinese in attendance, menus in English, and cultural touches such as geisha or a tea ceremony. Japan's standing, delivered quietly.

What is the minimum number of guests?

From two. We also have a hall for up to 120, so we will match the room to your numbers.

Can we book at short notice, even the same day?

If a room is free, yes. For an important dinner or a VIP who has just landed, call us first and we will see what we can do.

Is there a cancellation charge?

As a rule, cancellations are free of charge until 16:00 the day before. However, the terms differ depending on the course you choose and the number of guests, so we will give you the details separately.
