One evening that becomes
the best of Japan
More than a meal —
Japan itself, experienced
What guests from abroad want in Japan is not simply fine dining.
It is the history and architecture of a place, its garden, food, performing arts and service —
all of it at once, in an evening nowhere else can substitute for.
In Akashi-cho: a sukiya-style house and a Japanese garden, fully private rooms,
kaiseki and our mizutaki, and the traditional arts, all under one roof.
Jisaku is a ryotei that delivers Japan itself, complete in Tokyo,
in the course of a single evening.
The ground and the house
tell the story
Heritage
-
一Akashicho
Akashi-cho, where Japan met the world
Akashi-cho flourished as a foreign settlement in the Meiji era, a place where people who had crossed the sea and people of Japan mixed. Before the meal even begins, the ground itself starts telling the story.
-
二Architecture
Sukiya architecture from the Iwasaki villa
Founded in 1931 on the foundations of the Iwasaki family's villa. The sukiya-style house survived the Tokyo air raids and still carries the memory of modern Japan — the real thing, not a reproduction.
-
三Garden
A 2,600㎡ Japanese garden
Koi move through the pond garden, and at night the waterfall and the trees are lit. The moment you pass the gate, a sanctuary opens that does not feel like central Tokyo.
-
四Story
A setting that starts conversations
Where the land came from, how the house was built, what the garden is doing tonight. A space this full of things worth telling is the best icebreaker there is, across any nationality or culture.
Comfortable
for every guest
Comfort
-
一Seating
Chairs, or a sunken kotatsu table
Hours of kneeling is hard on Western guests and on older ones. Rooms with tables and chairs, or with a sunken floor well, keep the feel of the tatami room while taking the strain out of it.
-
二Bilingual Staff
Nakai who speak English and Chinese
A dedicated nakai stays with your room and explains each dish — the ingredients, how it was cooked, what the season has to do with it. She keeps pace with the conversation, so the language never becomes a wall.
-
三Etiquette
Etiquette, guided without a lesson
Taking off shoes, handling chopsticks, how to sit. The nakai smooths all of it into the flow of the evening, never lecturing, and never at the cost of a guest's dignity.
-
四Privacy
Private rooms that hold a confidence
All nineteen rooms stand on their own, scattered across a wide and quiet site. It is still enough to hear the garden's waterfall — so a delicate negotiation, or a conversation before a partnership, can proceed calmly.
Food
worth talking about
Cuisine
-
一Mizutaki
Mizutaki, taught to one heir
Chicken and water alone, simmered for hours into a broth with real depth. One cook keeps the taste, passed to a single heir each generation — a dish with a story you can tell at the table.
-
二Wellbeing
Light cooking that lets ingredients speak
Kaiseki that draws out what the ingredient already is. Mizutaki, rich in collagen and amino acids, lands well with guests who care about health and about where their food comes from.
-
三Variety
Wagyu, tempura, sushi as theatre
Kuroge wagyu sukiyaki and shabu-shabu, tempura fried in front of you, sushi shaped by hand at the table. We build the menu around your guests' tastes and what the evening is for.
-
四Dietary
Dietary needs, fully prepared for
Allergies, vegetarian, vegan, religious requirements — handled individually once discussed in advance. We check down to what is in the dashi and the seasonings, so a multinational table genuinely works.
Everything
in one place
Why Jisaku
-
一One-Stop
No transfers, start to finish
Cultural experience, dinner, farewell — all in one place, with no moving between venues. Nothing extra is asked of your guests, and the evening never loses its thread.
-
二Scale
From a handful to 120
From a small, confidential dinner in a private room to a banquet or gala for 120. Whatever the scale and whatever it is for, we have the right room.
-
三Operation
Transport, language and staging together
Cars, entertainment, sound and video are all coordinated in one place. Steady enough to slot into a conference programme or an incentive trip.
-
四Participation
Culture your guests take part in
Kagami-biraki, tea ceremony, kintsugi, ikebana. Not only watched but done — and taken home. It turns an evening from a dinner into an immersion in Japanese culture.
-
五Planner
One planner, from first call to last
From the first enquiry to running the evening itself, you deal with one dedicated planner. Meetings beforehand, a site visit, gifts — all of it in one pair of hands.
Few places in central Tokyo let you meet a Japanese garden, the traditional arts, kaiseki and a fully private room all in one evening.
This is what Jisaku can give guests from abroad: “the real Japan”, in a single seating.
Japan through all five senses
Cultural ExperiencesAdd Japan's living traditions to the kaiseki. Geisha, tea ceremony, kabuki, traditional music — cultural experiences that give overseas guests “the real Japan”, woven into the evening with commentary in English.

From first call to the night
we design all of it
Four Steps
Hosting guests from abroad takes more than a booking. The purpose of the evening, your guests' nationalities and dietary needs, the right room and the route to it, the staging, the running order on the night — a dedicated planner takes on all the preparation that would otherwise sit with the host. Because we handle everything from large banquets to small confidential dinners, we can put together the evening your purpose actually calls for.
-
一
Step 01
Enquiry and purpose
A welcome, groundwork before a negotiation, or a celebration of a signed deal? We ask what the evening is for, then map your guests' nationalities, languages, numbers, standing and interest in Japanese culture.
-
二
Step 02
Design and choice of room
Chairs or a sunken table, a room facing the garden, and the route guests take — chosen deliberately around diets, physical needs and confidentiality. Then the menu, the staging and the running order.
-
三
Step 03
On the night
A bilingual nakai meets your guests at the entrance. The toast, the pace of the courses, the moment the performance begins — we run it exactly as designed.
-
四
Step 04
Farewell and afterwards
Photographs, menus in English, gifts handed over, and a chauffeured car home. We can even help translate the thank-you letter afterwards.
