A wedding anniversary kept at a ryotei
Each anniversary has its own name — paper, tin and so on — and custom suggests a gift to match. Something made of paper, such as an album, for the first year; tin at ten; pottery or porcelain at twenty; and gold at fifty, which is why it is called the golden wedding. The gifts grow richer as the years accumulate, and each anniversary becomes a point at which the bond is deepened.
More and more people now book a table as a present to their parents: a seasonal kaiseki, taken slowly at a ryotei, on the day itself. The flavours of the season and the hospitality that goes with them make a while there is no replacing, and give a couple's history its colour.

A proper kaiseki course of the season, with the handsome dishes a celebration calls for. To mark the milestone we include one whole celebration sea bream, head and tail on, and a drink for the toast for everyone at the table. May the whole family celebrate to their hearts' content.

Why not share our mizutaki, the dish Jisaku has been loved for since it opened, at the celebration table as well?
"If more than one person makes it, the taste changes" — so it is entrusted to a single cook, and it became the dish the house is known for. Chicken and water, nothing else. The technique was worked out to draw the bird's own quality forward, and it uses the whole chicken, head to feet, with nothing wasted.
