Would you like to try our specialty, mizutaki?
tsukijiji jigyosaku no mizutaki (water-boiled rice pudding)
Since its establishment in 1931, Jisaku Honda has had only one chef prepare this signature dish, believing that the taste would change if more than one chef made it. Instead of incorporating a variety of ingredients, only chicken and water are used as ingredients. The technique was created to bring out the original charm of the chicken, and the whole chicken is used from head to toe without wasting anything. The taste has been passed down from generation to generation, and even now, more than 95 years after its establishment, only one mizutaki keeper continues to preserve the taste.
