Specialty Mizutaki (deep-fried rice cake) - Tsukiji Jisaku official-.

Golden soup for a nourishing family meal

Specialty: Ordering mizutaki

The traditional taste of the water heater, which has been passed down and preserved by only one person.
We hope you will enjoy the authentic taste that could only be enjoyed in a ryotei restaurant at home.
We do not make it in advance, but deliver it vacuum-packed and frozen from the time of order.

tsukijiji jigyosaku no mizutaki (water-boiled rice pudding)
Since its establishment in 1931, Jisaku Honda has had only one chef prepare this signature dish, believing that the taste would change if more than one chef made it. Instead of incorporating a variety of ingredients, only chicken and water are used as ingredients. The technique was created to bring out the original charm of the chicken, and the whole chicken is used from head to toe without wasting anything. The taste has been passed down from generation to generation, and even now, more than 90 years after its establishment, only one mizutaki keeper continues to preserve the taste.

tsukijiji cure

Founded in 1931 by Jisaku Honda.
The garden is a traditional sukiya-style building that has remained unchanged since the Meiji period. A waterfall flows in the pond and 150 Nishikigoi swim gracefully. This is a long-established luxury ryotei restaurant where you can dine with a view of an unparalleled location where you can enjoy the seasonal changes in scenery. In particular, the "famous mizutaki," a dish that has been passed down from generation to generation, has long been loved by many celebrities and others who visit the restaurant to enjoy it.

We talked to a nutritionist about the nutritious water dropwort!

Jisaku's mizutaki uses only chicken meat. It is safe, additive-free and chemical-free, of course, but what about the nutritional value? Chicken has the image of being healthy and rich in protein, but what benefits does it offer?

Protein is an essential nutrient for building all tissues of the body, so it is important for all generations, from children to adults, to consume a good amount of protein. Chicken meat contains a good balance of these essential amino acids and has an amino acid score of 100 (all nine essential amino acids exceed a certain standard), making it an ideal food to consume to maintain good health. Therefore, chicken is an important food to consume in order to maintain good health. Essential amino acids are also effective in recovering from muscle fatigue, so adding chicken to your diet after exercise will help you feel less fatigued.

It's full of protein that you want to consume well.
What other nutrients can I get?

Chicken also contains high levels of vitamin A. Vitamin A, which is the source of skin and mucous membranes, can be expected to improve wrinkles and sagging skin, and is recommended for those concerned about aging. Collagen, which is abundantly contained in chicken skin and bones, is also essential for beautiful skin. Other nutrients include iron, which helps prevent anemia, vitamin B6, which enhances immune function, and zinc.

Jisaku's mizutaki boasts a soup that is simmered for a long time.
That means plenty of nutrition is in the soup.

By simmering the chicken for a long time, the umami ingredients can be fully appreciated. Since the collagen contained in chicken meat easily dissolves into the cooking broth as gelatin, mizutaki, which can be enjoyed with the entire broth, is a good source of collagen.
Collagen is said to be effective in preventing osteoporosis and arthritis as well as in beautifying the skin. Mizutaki is a versatile nabe that can be enjoyed all year round by eating it with seasonal vegetables.

The combination of summer vegetable "tomatoes" is nutritious!
Tomatoes in a pot together
Chicken protein and the vitamin C contained in tomatoes together promote collagen production, which can be expected to have a skin beautifying effect. The acidity of the tomatoes increases appetite and aids digestion, allowing the nutrients in the chicken to be fully absorbed.

How to eat

Before eating the frozen mizutaki, soak the whole bag in hot water to thaw, or "steam" it over low heat to thaw it to a certain extent, and then transfer it to a pot. The water drop will not burn on the pan and will be delicious. If you are going to pour directly into a pot, please do so slowly over low heat. We recommend using only onions to enjoy the same taste as in a ryotei (Japanese restaurant), but if you add vegetables, please taste the soup before adding them.

Simplified 90-second introduction

Increase the nutritional value by adding it to the pot and eating it together! Increased absorption rate! Introducing the best ingredients!

Onion" is the best ingredient to reproduce the same taste as ryotei (traditional Japanese restaurants).
Onions contain a large amount of allicin. Allicin is effective in thinning the blood and relieving fatigue, and when consumed together with vitamin B1 contained in chicken, it has a synergistic effect in relieving fatigue.

mushrooms
Mushrooms are high in fiber, so chewing them thoroughly has the advantage of making you feel fuller. Chewing well over time stimulates the satiety center. Because each of the nutrients in mushrooms has its own unique function, when combined, they can support various aspects of the body's functions.
Shiitake mushrooms ... eritadenine (lowers cholesterol)
Shimeji mushrooms ... Ornithine (relieves fatigue)
Enoki mushrooms...GABA (increases alpha waves, activates the parasympathetic nervous system, and has a relaxing effect)

cabbage
Cabbage is rich in many nutrients needed by the body, such as dietary fiber, vitamin C, and potassium, and contains many water-soluble vitamins, making it ideal for dishes such as Mizutaki, in which the entire soup is eaten. It is a good source of nutrients dissolved in the broth. Dietary fiber absorbs fat, sugar, and sodium (salt) and removes them from the body. Cabbage, rich in vitamin C, is a great food for those who want to keep their skin healthy.

tomato
Chicken protein and the vitamin C contained in tomatoes together promote collagen production, which can be expected to have a skin beautifying effect. The acidity of the tomatoes increases appetite and aids digestion, allowing the nutrients in the chicken to be fully absorbed.

Asian ginseng (Panax ginseng)
Carrots, like chicken, contain high levels of vitamin A, which prevents the mucous membranes from drying out and moisturizes the skin. Vitamin A goes well with oil, so the oil content of the chicken helps the carrots absorb the nutrients. Peel carrots thinly with a peeler to make fluttering carrots, which cooks quickly and adds color to the Mizutaki.
